I went to Costco this morning and was looking in the meat section and saw pork bellies and decided I need to buy them. Not know anything about makin bacon I bought a pack that was sliced in about 1" strips. Is that going to be a problem? Now that I'm home and snooping around the bacon section of AR I think I should have waited until I found a big slap of pork belly.ðŸ˜Â

Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
Looks like great meaty chunks of pork belly! You can make bacon out of it if you want. You will have a lot of flavorful smokey "end slices", but that's not necessarily a bad thing (really great to flavor beans etc.). Or, you could dry brine, rub (with whatever) & smoke it low & slow. It would then be delicious smoked pork belly, just not "cured" as bacon is. You could even slice it & fry it as is. I loves me some plain old fried "side pork", gravy & biscuits every once in awhile.
Breadhead i buy those all the time at Costco. They also sell a huge slab that you can cut up to the size of your liking. That was actually the first thing I smoked in my BBQ career as all the fat was appealing to season my WSM.
With the little guys you bought, I like to put a generous double portion of rub on them (I used harry soo's SYD all purpose) , smoke them for a couple hours and then braise them in foil with a little bit of brown sugar and agave. They go great as sliders on Kings Hawaiian Rolls with some vinegar based cole slaw!
Also you can probably SV it and then use a butane torch if you've got one to make it crispy- just an idea, i have never tried that personally. A lot of cool asian style pork belly recipes.
